Betutu Chicken Curry

This traditional Balinese royal dish that I have modified to my own recipe. Serves well with salad, some basmati rice and chilled fresh lemon juice. A perfect recipe for a busy day where you have many chores to attend to.

To Grind

  • 4 cloves garlic
  • 3 cm ginger
  • 10 rose shallots
  • 8 bird chilies
  • 4 green chilies
  • 4 cm fresh turmeric
  • 2 stalk slemongrass
  • 3 cm galangal
  • 1 teaspoon coriander seeds
  • 1 teaspoon Nisa Bakri Garam Masala
  • 1 sachet Nisa Bakri chicken stock
  • 1 tablespoon brown sugar
  • 2 tablespoons olive oil

For Garnish

  • 1/2 cup pomegranate for garnishing
  • Chopped coriander and mint leaves

Instructions

  1. In a skillet, add some olive oil .
  2. On medium heat, saute the grinded A ingredients for 10 minutes or until the oil breaks and all ingredients combine together at medium heat.
  3. On a baking dish, place the chicken and fill the stomach of the chicken with ingredients .Spread the sautéed mix evenly on the skin of the chicken.
  4. Preheat the oven at 160C. Roast the chicken for 3 hours.
  5. Check for doneness. Once done leave it to rest for 20 minutes.
  6. Garnish with pomegranate, coriander and mint leaves and serve.

  • 1 leek chopped
  • 1 tomato diced
  • 2 stalks coriander leaves
  • 1 bunch mint leave
  • 2 green chilies, 2 red chilies
