Paste Highlight

For Pounding

  • 10 shallots
  • 10 red chillies
  • 3 green chillies
  • 5 dried chillies
  • 4 cloves garlic
  • 1 cm galangal
  • 3 tsp dried prawns

For Spices

  • 4 tbsp fish curry powder
  • 1 tsp garam masala
  • 1 tsp cumin
  • 1 tsp coriander powder
  • 1 tsp peppercorns
  • 1 tsp turmeric powder
  • 3 tsp dried prawns

For Frying

  • 1 tsp halba
  • 10 curry leaves
  • 4 tbsp olive oil

Instructions

  1. In a large cooking pot, heat the oil and fry the curry leaves and halba. Then, once they are fragrant, add in the blended ingredients and the spices.
  2. Stir for 15 minutes and gradually add some water Once all 4 cups of water have been added, bring to a boil and add the fish together with the ladies’ fingers and tomatoes.
  3. Add coconut milk, tamarind juice and salt according to taste.
  4. Garnish with coriander leaves. Serve hot with rice.

  • 4 cups water
  • Tamarind juice (to taste)
  • 1 tbsp fish sauce (optional)
  • Salt to taste
