Instructions

  1. Dip the prawns in egg white and then toss them in the frying flour. Fry the prawns medium well and set aside.
  2. In another pan, over low heat, melt the butter, and then add curry leaves and bird’s eye chilies. Fry for 5 minutes.
  3. Add the mashed salted egg yolk and fish stock.
  4. Keep stirring and add in the fried prawns together with the chilies.
  5. Cook for 5 minutes and garnish with coriander, sliced onions and mint leaves.

  • 7 tiger prawns
  • 1 tablespoon oil
  • 3 salted egg yolk, boiled and mashed
  • 2 tablespoon frying flour
  • 1 egg white, beaten
  • 10 curry leaves
  • 3 cloves garlic, crushed
  • 3 bird’s eye chilies, chopped
  • 1 green chili, chopped
  • 1 red chili, chopped
  • 1 tablespoon fish stock
  • ¼ cup butter
