Vegetable Curry

A treat for vege lovers. It is ice to have a meat-free meal once in a while. This vege curry will give us a good option of a vegetarian dish. Those on a diet can also eat it with capati ( an indian bread).

To Saute

  • 1 spring curry leaves
  • 1 packet Nisa Bakri Mixed Spice
  • 2 dried chilies

Instructions

  1. Heat a pot and add oil
  2. Lower the flame. Throw in the sauté items and fry till the it becomes aromatic
  3. Then add the Nisa Bakri vegetable curry sauce and some water to dilute it. Let it simmer for 5 minutes.
  4. Increase the flame. Add in the potatoes and cook till potato becomes soft. Add the other vegetables, stir it generously and add more water to achieve the preferred thickness. Cook till all the vegetables and potato is well cooked.
  5. Add coconut milk, and lower flame. Let it simmer for five minutes. Serve hot with Basmati rice.

  • 1 packet 150 grams Nisa Bakri Vegetable curry
  • 2 tablespoon corn oil (or any other vegetable oil)
  • 2 round eggplants, cut in halves
  • 1 carrot cut at prefered thin sliced or diced
  • 3 long beans
  • 2 potatoes diced
  • 5 ladies ingers/okra
  • ½ bunch of cauliflower
  • 1 tomato diced
  • 2 red chilies
  • 2 green chilies
  • 2 cups water
  • 1 cup coconut milk
